"Congo" Amaranth Seeds
Congo Amaranth is a striking green type of amaranth with beautiful black and brown seeds. A staple in Congolese cuisine, it is mostly used for its abundant leafy greens. It’s gorgeous and would work amazingly in an edible landscape. Use as a grain for cooking, or greens for salad, etc. Greens are best cooked like spinach or harvested when young for salads. Useful as a micro green. Plants produce single heads and average about 3 feet tall.
